The production of natural food additives from plant, animal and fungal sources is gaining importance day by day to produce food with natural ingredients. Phenolic compounds commonly found in plants are organic compounds that contributes to improve the textural and sensory properties of foods, as well as enriching their nutritional values, and takes an active role in ensuring food safety due to its antimicrobial, antioxidant and antifungal effects. Studies conducted also show that phenolic compounds can be used in the treatment of infection, obesity, diabetes, cardiovascular health problems and aging.
