Ulusal Bahçe Bitkileri Kongresi LA - tr AB - Görülme sıklığı giderek artan ve adı ülkemizde de her geçen gün daha çok duyulan modem zaman hastalıklardan biri de çölyak hastalığıdır. Buğdaydan yapılan ekmek, arpa, çavdar ve az miktarda yulaf gibi tahıl grubunun tüketilmesi ile bağırsaklarda besin maddelerinin sindiriminin ve emiliminin bozulmasına yol açan bir hastalıktır. Dünya genelinde bu hastalık görünme oranı 1/300 iken, ülkemizde ortalama olarak 1/250’dir. Çölyak hastalarına tanı konulduktan sonraki aşamada uyulması gereken tek tedavi yöntemi ömür boyu glutensiz diyet uygulanmaktır. Bu amaçla günümüzde çalışmalar yapılmakta ve bu hastalar için alternatif glutensiz diyet programları yapılmaktadır. Bu amaçla quinoa bitkisi yüksek besin değerine sahip olmasının yanı sıra kuraklık, don, tuzluluk gibi olumsuz koşullara dayanıklılığı ile quinoa tüm dünyada ilgi gören bir bitkidir. Quinoa, gıda güvenliğini sağlamada Birleşmiş Milletler Gıda ve Tarım Örgütü (FAO) tarafından yüzyılın bitkisi olarak nitelendirilmiştir. Quinoa tohumları glüten içermez. Bu özelliği ile diyet uygulayan kişiler için ve besleyici özelliği ile çocuk beslenmesinde uygun bir gıda maddesidir. Diğer bitkimiz amaranth ise kuraklığa karşı sağladığı adaptasyon yeteneği ile yarı kurak bölgelerde dane ürünü için yetiştirilebilecek geleceğin tahıl bitkisi olma özelliğindedir. Ayrıca, yaprakları da yeşil sebze olarak tüketilebilir özelliktedir. Amaranth glutensiz doğal tahıl olarak tanımlanmasının yanı sıra tahıllara oranla daha yüksek protein ve amino asitleri içerir. It is a disease caused mainly by consuming bread made of wheat and partly by consuming barley, rye, and oats, which cause malfunctions in the digestion system and diminish absorption of the nutrients. The occurrence of this disease is about 1/300 in the world and 1/250 in Turkey. Followed by the diagnosis of the disease, the only treatment method to be followed is lifelong gluten free diet. Therefore, research studies are ongoing and alternative gluten free diets are produced for the patients. Quinoa plant not only has high nutritious value but also is resistant to factors such as draught, frost, and salinity, attracting the attention across the world. Quinoa plant was described as the plant of the century by the Food and Agriculture Organization (FAO) for providing the food security. Quinoa seeds do not contain gluten. With this property, it is a proper food ingredient for those having diets and for the children. Another plant, amaranth, has the ability to adapt to draught conditions in the semi dry regions, and is a candidate to be the plant of the future for kernel production. Further, the leaves of amaranth can be consumed as vegetables. Amaranth is described as gluten free natural product and also contains more protein and amino acids compared to the oats.
