It was established that the mass fraction of water in the Acacia honey was ranging from 15,71% up to 16,93%, the mass fraction of the invert sugar-from 77,65% up 84,50%, the mass fraction of sucrose from 2,27% up to 4,7%, the diastatic number-from 9,25 up to 20,7 Gothe units, the mass fraction of hydroxymethyl furfural was ranging from 3,69 up to 10,72 mg/kg, the total acid number-from 0,96 up to 1,96 cubic centimeters, the NaOH solution (in milliequivalent) per 100 grams of honey and the ash content was ranging from 0,007 up to 0,2%. It was identified that the lead content in the Acacia honey was varying annually from 0,010 mg/kg up to 0,025 mg/kg, the cadmium-from 0,004- <0,01 mg/kg, the arsenic-from <0,01-0,020 mg/kg, the cesium-137-from 0,030 up to 0,6 Bq/kg and the strontium-90 was varying from 1,0 up to 7,6 Bq/kg.}, number={(Özel Sayı 2) 1.
