N2  - Safety food is described food that is suitable to consumption as physical, chemical andmicrobiological and isn't lost food value. Safety food is important not only domesticconsumers but also other countries' consumers as social, economical and environmental. Inthis study has been researched consciousness level of consumers deal with food safety inTokat. 48,39 % of consumers haven't know food safety and any haven't hear this concept,51,61 % of consumers have explained that they have heard food safety beforehand. 79,69 %of consumer heard food safety described this matter as true, but 20,31 % of they haven'tknow that what does it signify or have know wrong. Significant rate of consumer (74,60 %)have conceived that foods which they consume are risky or very much risky for humanhealth. 89,92 %of consumers decelerated that they are willing to pay much more than regularprice for safety foods. One of problems of food sector in Turkey is deficiency in controls.Enormous of consumers (95,56 %) think that there is deficiency in food control and firms infood manufacture haven't control sufficient. Food legislation of Turkey has begun to applyimprovements and innovations deal with food safety. Food legislation of Turkey hasadvanced towards quality systems like HACCPand GMP
