Likens-Nickerson simultaneous distillation extraction technique (SDE) was used to get aroma compounds of Nizip yaglik olive oil sample. Dichloromethane and pentane/dichloromethane (2:1) were used as solvents. Sensory analysis of olive oil sample and its aromatic extracts were evaluated by seven trained panelists group. To determine the most suitable solvent in aroma extraction process, similarity and intensity tests were applied. The panelists asked to compare the olive oil sample and its scents of aromatic extracts obtained from two different solvents.
