Increase in demand to dried tomato in recent years gives the growers opportunity to value the extra product.As energy prices constitute the highest amount in drying cost it is an important factor to make use of alternative energy sources. When considering all these facts we can come to the conclusion that it is economically and technically possible to use solar energy in tomato drying in Tokat. Sample of tomato which is called Yüksel (Y-67-F1) has been pre-processed and dried on a solar multi shelf dryer. Drying time, weight lose and quality of products are simultaneously compared to the dried tomato in open air under the same solar radiation. Two separate drying experiment were carried out in 2006. At the end of the fi rst experiment the products which were in the bottom shelf of the drier got dry in 120 hours. Hue angle and croma values of these experiments have been found as approximately 54.430 and 22.52. When compared with the fresh products croma value went down to % 45. At the end of the second experiment, the products which were at the bottom shelf of the drier got dry in 168 hours. Hue angle and croma values of these experiments have been found as approximately 55.780 and 17.69. When compared with the fresh products croma value went down to % 54.
