AB  - Osmanlı’da kar ve buz temini, gıda ve suyun soğutulması gibi ihtiyaçlar nasılve nerelerden karşılanırdı? Kar kuyuları için ne gibi standartlar oluşturulmuş ve ne şekildeişletiliyordu? Topkapı Sarayı’nda bu işle uğraşan görevliler kimlerdi ve sarayda kar ve buz neşekilde kimlere dağıtılıyordu? Osmanlı Devleti’nde, kar ve buz, gıda ve suyun soğutulmasındakullanıldığından gerekli hijyenin sağlanması için belirli standartlar oluşturulmuştur. Bu işalanı bir sektör olduğu için çok sayıda insanın ekmek kapısı olduğu anlaşılmaktadır. Bizburada arşiv kaynaklarının da katkısıyla, kar ve buz mekanlarının tespiti, temini, nakli, fiyatve işleyişinin düzenlenmesi yanında hem esnaf hem de tüketim noktasındaki yaygınlığınıtespit etmeye çalışacağız.

N2  - How did the needs such as ice and snow and cooling food and water supply in theOttoman Empire? What kind of standards were formed for the snow pits and how were thesesnow pits run? Who were the officiers that dealt with this job at Topkapi Palace? How were iceand snow distributed and to whom were they disributed at the palace? Since ice and snow wereused to cool food and water, some standardizations were formed to provide necessary hygiene.Becasue this job was a sector, it was done for a living by a lot of people. In this paper, withthe help of archive sources, we will both handle subjects of spaces, supply, transport,prize andregulation of the functioning of snow and ice and try to find out their prevalence in terms oftradesmen and consumption.
