Bazı Ormangülü Ballarının Fenolik İçerik Kompozisyonu

Abstract

Ormangülü balı,
ülkemiz coğrafyasında özellikle Karadeniz Bölgesi kıyı kesimlerinde yayılım
gösteren Rhododendron bitki türlerinin kaynaklık ettiği ballardır. Halk
arasında deli bal olarak da bilinen bu bal, içeriğinde grayanotoksinler (GTX)
denilen oldukça aktif toksinleri barındırır ve tüketimi birçok toksikolojik
semptoma sebep olabilir. Toksik etki en çok hipotansiyon ve bradikardi
semptomlarıyla kendini göstermektedir. Ancak bu balların içeriğinde sekonder
metabolitlerin önemli ajanları olan fenolik bileşenlerin de bulunduğu bilinmektedir.
Fenolik bileşenler özellikle antioksidan ve antimikrobiyal gibi etkilerden
sorumlu biyolojik moleküllerdir. Mevcut bu çalışma, Karadeniz Bölgesi’nin bazı
illerinden temin edilen ormangülü ballarındaki fenolik bileşenleri teşhis etmek
amacıyla tasarlanmıştır. Bu amaç doğrultusunda RP-HPLC-DAD ile 17 fenolik
bileşenin kalitatif ve kantitatif analizi gerçekleştirilmiştir. Analiz sonucuna
göre tüm bal örneklerinde p-OH benzoik asit bileşenine (2,351-18,992 µg/g
numune) rastlanmış olup kullanılan standartlar nispetinde major bileşen olarak
değerlendirilmiştir.
