Et ve Et Ürünlerinde BSE-Risk Materyali Var Mıdır?

Abstract

Bovine spongiform encephalopathie (BSE), 1986 yılından beri bilim alanında en fazla dikkat çeken konulardan biri olmuştur. Şu ana kadar, insan gıda zincirine giren BSE enfekte hayvan sayısının 840.000-1.250.000 olduğu tahmin edilmektedir. BSE-spesifik risk materyalleri (SRM) olarak sınıflandırılmış beyin ve spinal kord gibi merkezi sinir sistemi (MSS) dokularına, enfeksiyonun ana kaynağı olarak bakılmaktadır. İnsanlara BSE enfeksiyonunun bulaşmasında risk oluşturmaları nedeniyle, MSS dokuları ile kontamine etlerde gıda güvenliği arttırılmıştır. Son zamanlarda insanlarda görülen, BSE ile etiyolojik benzerlik gösteren new variant Creutzfelt-Jakob (nvCJD) enfeksiyonu da BSE enfekte hayvanlardan üretilmiş etlerin tüketimine bağlı olarak şekillenmektedir. Bu derlemede, et ve et ürünlerinde BSE-spesifik risk materyalleri hakkında bilgi verilmiştir.
