                            <p>Olive cultivation is gaining importance in Türkiye. Türkiye, the homeland of the olive, boasts a wide genetic diversity, and there are numerous local varieties whose botanical descriptions remain largely unknown. Identifying the characteristics of these varieties is crucial both for their contribution to olive production and for preserving genetic material that is threatened by various factors. This research was conducted to determine the characteristics of the local olive varieties ‘Beyrut’ and ‘Çopur’ grown in the Mut district of Mersin province. Tree growth vigour was &#039;medium&#039; in the &#039;Beyrut&#039; variety and &#039;vigorous&#039; in &#039;Çopur&#039;; yield was high in both varieties; alternate bearing was partial in &#039;Beyrut&#039; and severe in ‘Çopur’. Bud swelling in mid- to late March, bud burst in late March, flowering onset in early to mid-April, full bloom in late April to early May, and harvest maturity in late October to early November. Fruit size was found to be ‘very large’ in the ‘Beyrut’ variety and ‘large’ in the ‘Çopur’ variety. The number of fruits per kilogram in the ‘Beyrut’ variety was 157.9 and 217.8 in the ‘Çopur’ variety; the flesh ratio was 83.51% in the ‘Beyrut’ variety and 75.27% in the ‘Çopur’ variety; the seed ratio was 16.49% in the ‘Beyrut’ variety and 24.73% in the ‘Çopur’ variety; the separation of the flesh from the seed was ‘medium’ in the ‘Beyrut’ variety and ‘easy’ in the ‘Çopur’ variety; and the oil content was ‘low’ in both varieties. In conclusion, both local varieties studied are suitable for table use due to their large fruit size. The study results are expected to contribute to scientific and practical applications, particularly for the conservation and development of local olive varieties.</p></trans-abstract>
                                                                                                                                    <abstract><p>Zeytin yetiştiriciliği, Türkiye’de artan bir önem kazanmaktadır. Zeytinin anavatan bölgesinde yer alan Türkiye büyük bir genetik çeşitliliğe sahip olup, halen botanik tanımlaması yapılmamış, çok sayıda mahalli çeşit bulunmaktadır. Bu çeşitlerinin özelliklerinin tespiti hem çeşitlerin zeytin üretimine katkısı hem de tehdit altında bulunan genetik materyalin korunması bakımından önem arz etmektedir. Bu araştırma, Mersin ili Mut ilçesinde yetiştirilen ‘Beyrut’ ve ‘Çopur’ mahalli zeytin çeşitlerinin özelliklerini belirlemek amacıyla yapılmıştır. ‘Beyrut’ çeşidinde ağaç gelişme kuvveti ‘orta’, ‘Çopur’da ‘kuvvetli’; verim iki çeşitte de yüksek, periyodisite ‘Beyrut’ çeşidinde ‘kısmi’, ‘Çopur’da ‘şiddetli’ olarak belirlenmiştir. Tomurcuk kabarması mart ayının ortası ile sonu, tomurcuk patlaması mart sonu, çiçeklenme başlangıcı nisan başı ile ortası, tam çiçeklenme nisan sonu ile mayıs başı, hasat olgunluğu ise ekim sonu ile kasım başında tespit edilmiştir. ‘Beyrut’ çeşidinde meyve iriliği ‘çok iri’, ‘Çopur’da ‘iri’ olarak bulunmuştur. ‘Beyrut’ çeşidinde kilogramdaki meyve sayısı 157,9 adet, ‘Çopur’da 217,8 adet; et oranı ‘Beyrut’ çeşidinde %83,51, ‘Çopur’da %75,27; çekirdek oranı ‘Beyrut’ çeşidinde %16,49, ‘Çopur’da %24,73; meyve etinin çekirdekten ayrılması ‘Beyrut’ çeşidinde ‘orta’, ‘Çopur’da ‘kolay’; yağ oranı iki çeşitte de ‘düşük’ bulunmuştur. Sonuç olarak incelenen iki mahalli çeşidin de meyvelerinin iriliği nedeniyle sofralık olarak değerlendirilmesi uygundur. Çalışma sonuçlarının, özellikle mahalli zeytin çeşitlerinin korunması ve geliştirilmesine yönelik bilimsel ve pratik uygulamalara katkı sağlayacağı düşünülmektedir.</p></abstract>
