Okratoksin baz Aspergillus ve Penicillium türleri taraf ndan üretilen bir mikotoksindir.En s k görülen ve en toksik olan tipi Okratoksin A d r. nsan sa lA n n kanserojen, genotoksik, teratojenik, immunotoksik ve nefrotoksik etkileri ortaya konmu tur. nsanlarda böbrek hastal klar na ve kansere neden olur. Okratoksin A tah llar, sebzeler, kurutulmu meyveler, f nd k, et ve baz içeceklerde tespit edilmi tir.Son y llarda arap, sirke, kuru üzüm ve üzüm suyunun da önemli miktarlarda OTA içerdi i belirlenmi tir. Üzüm ve ürünlerinde OTA üretti i bilinen en yayg n türler A. Carbonarius, A. Niger ve A. Tubingensis tir. OTA kontaminasyonunun önlenmesi veya azalt lmas için üzüm ürünlerinin üretimi ve hasad s ras nda iyi tar m uygulamalar ve HACCP ilkeleri uygulanmal d r
