                                                                                                                        <abstract><p>Buçalışmada Bursa siyahı ve Sarılop incirlerinin fenolik bileşikleri, organikasit, şeker içeriği ve antioksidan kapasitesi potansiyelleri kıyaslanarakkurutma işleminin bu bileşenler üzerine etkileri araştırılmıştır. Fenolikbileşiklerin analizleri LC-DAD-ESI-MS/MS kullanılarak gerçekleştirilmiştir. Çalışmadatoplam 11 adet fenolik bileşik tanımlanmıştır. Toplam fenolik bileşik miktarıSarılop incirlerinde 313.02 mg /kg ve Bursa siyahı incirlerinde ise 320.49 mg/kg kuru ağırlık olarak belirlenmiş ve klorojenik asit ve türevlerinin ikiincir çeşidi içinde baskın fenolik bileşik olduğu saptanmıştır. Kurutmaişleminden sonra ise, fenolik içeriğin Bursa siyahı için 181.99 ve Sarılop için139.70 mg/ kg kuru ağırlık değerlerine kadar düştüğü belirlenmiştir. Kurutmanınantioksidan kapasite değerlerinde de azalmaya neden olduğu, organik asit veşeker içeriğini ise istatistiksel yönden önemli düzeyde etkilemediğisaptanmıştır.</p></abstract>
