AFLATOXIN B1 BINDING AND ANTI-CARCINOGENIC PROPERTIES OF LACTIC ACID BACTERIA

Abstract

Lactic acid bacteria that are
used as starter cultures in food industry are natural members of human
microbiota. In recent years, researches are focused on lactic acid bacteria’s
mycotoxin especially aflatoxin B
1 (AFB1) biological
detoxification features. The results obtained showed that AFB
1 and
its metabolite AFM
1binding property may change between even the
strains are revealed. So studies are aimed to find the superior strain. Lactic
acid bacteria show anti-genotoxic properties due to removal genotoxins such as
AFB
1 and AFM1 thus help to maintain host health. Also in
vitro
studies are reported that lactic acid bacteria showed
anti-proliferative effect and avoid the growth of cancer cells. In this review,
it is aimed to combine the removal mechanism of AFB
1 and AFM1
from food matrix and medium by lactic acid bacteria extensively and give the
current information about the anti-carcinogenic effect studies.

LAKTİK ASİT BAKTERİLERİNİN AFLATOKSİN B1 BAĞLAYICI VE ANTİKANSEROJEN ÖZELLİKLERİ

Abstract

Laktik asit bakterileri starter kültür olarak gıda
endüstrisinde yaygın olarak kullanılan, insan mikrobiyotasının doğal
üyeleridir. Son yıllarda laktik asit bakterileri üzerine yapılan araştırmalar
mikotoksinleri, özellikle de aflatoksin B
1’i (AFB1)
biyolojik etkisizleştirme özellikleri üzerinde yoğunlaşmaktadır. Elde edilen
sonuçlar AFB
1’in ve metaboliti olan AFM1’in bağlama
özelliklerinin türler hatta suşlar arası farklılık gösterebildiğini ortaya
koymaktadır. Bu nedenle yapılan çalışmalar genellikle üstün potansiyeli olan
suşları tespit etmeyi amaçlamaktadır. Laktik asit bakterileri AFB
1
ve AFM
1 gibi genotoksinleri ortamdan uzaklaştırarak DNA-biyokoruyucu
özellik göstermekte, dolayısı ile konakçı sağlığının devamlılığına katkı
sağlamaktadır. Ayrıca yapılan
in-vitro çalışmalarda laktik asit
bakterilerinin kanser hücrelerine karşı anti-proliferatif etki göstererek,
çoğalmalarını önlediği de ifade edilmektedir. Bu derlemede laktik asit
bakterilerinin gıda matriksi ve besiyerinde AFB
1 ve AFM1’i
uzaklaştırma özelliklerinin mekanizması ayrıntılı olarak ele alınmış,
  ayrıca anti-kanserojen etkileri üzerine
yapılan son çalışmalar hakkında bilgi verilmiştir.
