Abstract

Royal jelly which has several benefits for human nutrition is a secretion of mandibular glands of worker bees. The composition of royal jelly varies with the nature of product and the climate conditions of the area which it is produced. In the study the components of protein, lipid and sugar fractions of royal jelly and the determination of 1/-hydroxy 2-decanoic acid in detecting of adulteration were taken into consideration.

Arı Sütünün Bileşimi ve Tağşişin Saptanması

Abstract

İnsan beslenmesi yönünden yararlı bir ürün olan arı sütü, işçi arıların üst çene (mandibular) bezlerinin bir salgısıdır. Arı sütünün bileşimi üretildiği bölgeye, mevsime ve ürünün doğasına göre değişiklik göstermektedir. Çalışmada arı sütünün protein, lipit ve şeker fraksiyonlarının komponentleri ve tağşişin saptanmasından 10-hidroksi-2-decanoic asit tayini üzerinde durulmuştur.
