In this research, it is aimed to determine the efficiency and the nutrient materials of its meat such as moisture, crude protein, crude fat and crude ash of blue crab (Callinectes sapidus). The mean live weigh and meat weight of blue crab was determined as 128.044±10.71 g and 24.365±2.25 g and mean meat yield was23.36±10.71 %. As a result of nutrient materials analysis it was found that the percentages of mean moisture, dry matter, crude protein, crude fat, crude ash, calcium and phosphor of the blue crab's claw meat was 77.40 %, 22.60%, 17.60%, 0.22%, 3.20%, 0.20%, 0.18%, and abdomen meat was 77.80%, 22.20%, 17.50%, 2.40%, 0.37%, 0.09% and 0.04% respectively.
Bu araştırmada, mavi yengecin (Callinectes sapidus)et verimi ile etinin kuru madde, su, ham protein, ham yağ ve ham kül gibi besin maddelerinin belirlenmesi amaçlanmıştır. Mavi yengecin canlı ağırlık ortalaması 128.044±10.71 g, ortalama toplam et miktarı 24.365±2.25 g ve toplam et verimi % 23.060 olarak saptanmıştır. Besin maddeleri ile ilgili analiz sonuçlarına göre; mavi yengecin etinde ortalama su, kuru madde, ham protein, ham yağ, ham kül, kalsiyum ve fosfor oranları kıskaçta sırasıyla %77.40, % 22.60, %17.60, % 0.22, % 3.20, %0.20, %0.18 ve abdomende sırasıyla %77.80, %22.20, %17.50, %2.40, %0.37, %0.09, % 0.04 olarak tespit edilmiştir.
