                                                                                                <abstract><p>Yenilebilir filmler ve kaplamalar gıdaların raf ömrünün artması için önemli avantajlar sunan çevre dostu  bir uygulamalardır. Yenilebilir filmler ve kaplamalar, gıda kalitesini ve güvenliğini artırmak amacıyla  antioksidanlar, lezzet verici, renklendirici ve antimikrobiyal maddelerin taşıyıcıları olarak da  kullanılabilirler. Bileşenlerine göre, yenilebilir filmler ve kaplamalar üç kategoriye ayrılabilir:  hidrokolloidler, lipitler ve kompozitler. Hidrokolloid bazlı yenilebilir film ve kaplama materyallerinden  biri de aljinattır. Aljinat, çoğunlukla kahverengi alg türlerinden elde edilen ve doğal olarak bulunan bir  polisakkarittir. Aljinat esaslı yenilebilir filmler ve kaplamalar nem kaybını azaltmak, solunumu kontrol  etmek, ürün görünümünü zenginleştirmek ve kaliteyi iyileştirerek raf ömrünü uzatmak gibi  özelliklerinden dolayı ilgi çekmektedir. Bu çalışmada, kaplama işleminin temelleri, aljinatın yapısal ve  kimyasal özellikleri ile aljinat bazlı yenilebilir film ve kaplamaların meyve sebze işlemedeki  uygulamalarının derlenmesi amaçlanmıştır.</p></abstract>

                            <p>The use of edible films and coatings is an environmentally friendly treatment that offers substantial  advantages for shelf-life increase of many food products. Edible films and coatings can also be used as  carriers of antioxidants, flavoring agents, coloring agents and antimicrobials that will improve food  quality and safety. According to their components, edible films and coatings can be divided into three  categories: hydrocolloids, lipids, and composites. One of the hydrocolloid-based edible film and  coating material is alginate. Alginate is a naturally occurring polysaccharide obtained from generally  brown algae species. Alginate-based edible films and coatings are of interest because of their features  such as reducing moisture loss, controlling respiration, enhancing the appearance of the product, and  extending the shelf life by improving quality. In this study, it was aimed to review the fundamentals  of coating process and structural and chemical properties of alginate, applications of edible films and  coatings based on alginate in fruit and vegetable processing.</p></trans-abstract>
