                            <p>Mushroomis one of the important nutrients for human health and it is preferred forprotein, mineral, vitamin etc. contents. In addition, most mushroom species areconsidered in health due to their metabolic properties. Mushrooms take place intables with different forms of evaluation. In terms of production, it isproduced less than other agricultural products, but consumer demand is high. Ingeneral, mushrooms lose their quality in a short time after harvesting,necessitating their consumption in a short time. However, it is possible tomaintain the mushroom over a long period of time with some applications, bothduring production and after harvest. These are external chemical applicationsas well as irradiation and packaging techniques, storage conditions, etc. Inthis review article, some applications that can be used in mushroompreservation are given based on the studies of various researchers.</p></trans-abstract>
                                                                                                                                    <abstract><p>Mantarinsan sağlığı açısından önemli besinlerden biri olup, protein, mineral, vitaminvb. içerikleri bakımından tercih edilmektedir. Ayrıca çoğu mantar türlerimetabolik özelliklerinden dolayı sağlık açısından değerlendirilmektedir.Mantarlar farklı değerlendirme şekilleri ile sofralarda yer almaktadır. Üretimaçısından diğer tarımsal ürünlerden daha az üretilmesine rağmen tüketici talebifazladır. Mantarların genel itibariyle hasattan sonra kısa sürede kalitesinikaybetmesi tüketiminin de kısa sürede yapılmasını zorunlu kılmaktadır. Bununlabirlikte, gerek üretim sırasında gerekse hasattan sonra yapılan bazı uygulamalarile mantarların uzun sürede muhafazası mümkün olabilmektedir. Bunlar dışarıdanyapılan kimyasal uygulamalar olduğu gibi, ışınlama ve ambalajlama teknikleri,depolama koşulları vb. uygulamalardır. Bu derleme makalesinde mantarmuhafazasında kullanılabilen bazı uygulamalar çeşitli araştırmacılarınyaptıkları çalışmalar doğrultusunda verilmiştir.</p></abstract>
