                                                                                                <trans-abstract xml:lang="en">
                            <p>Bu çalışma, Ordu ilinde yetiştirilen‘Hayward’ kivi çeşidi meyvelerinde 2015 yılında yürütülmüştür. Çalışmada elmave karpit ile olgunlaştırılan kivi meyvesindeki bazı fiziksel ve kimyasaldeğişimler araştırılmıştır. Çalışma sonucunda meyve eti sertliğindekideğişimlerin uygulama ile zaman faktörü interaksiyonuna; nem, toplam kurumadde, askorbik asit, glikoz, fruktoz ve toplam şekerdeki değişimlerinuygulamalara; suda çözünür kuru madde miktarı ve sakkarozdaki değişimlerin dezamana bağlı olarak önemli çıktığı belirlenmiştir. Çalışmada elma, kiviyiönemli olgunlaşma parametreleri olan meyve eti sertliği ile suda çözünür kurumadde miktarı değerleri yönünden, 4. günde yeme olumuna getirmişken, karpituygulamasında belirtilen olum parametreleri için biraz daha zamanın geçmesigerektiği anlaşılmıştır. Sonuç olarak, hem daha kısa sürede olgunlaştırmayısağlaması ve hem de sağlık yönünden riskleri bulunan karpite göre doğal birfaktör olması nedenleriyle kivinin olgunlaştırılmasında elmanın kullanımıtavsiye edilmiştir.</p></trans-abstract>

Sonuç olarak, hem daha kısa sürede olgunlaştırmayı sağlaması ve hem de sağlık yönünden riskleri bulunan karpite göre doğal bir faktör olması nedenleriyle ev tüketimlerinde kivinin olgunlaştırılmasında elmanın kullanımı tavsiye edilmiştir.</p></abstract>
