Determining of Heavy Metal Contents of Milk and Milk Products Consumed in Konya

Abstract

The milk and milk products playing an important role on human nutrition may be hazardous with respect to human health. One of these hazardous contaminants is also heavy metals. In the present study, 8 samples from each product and total 96 samples were analyzed. The ICP-AES instrument was used to determine the levels of heavy metals such as Al, As, Cd, Pb and Se of 12 different milk and milk products. It was concluded that milk and dairy products could be highly hazardous for human health in regard to Pb contents

Konya’da Tüketime Sunulan Süt ve Ürünlerinin Ağır Metal İçeriklerinin Belirlenmesi

Abstract

İnsan beslenmesinde önemli rol oynayan süt ve ürünleri, bazı kontaminasyonlarla insan sağlığı için riskli duruma gelebilir. Bu risk oluşturan kontaminasyonlardan biri de ağır metallerdir. Bu çalışmada her birinden 8 örnek olmak üzere toplam 96 örnek analiz edilmiştir. 12 farklı süt ve süt ürünü örneğinin Al, As, Cd, Pb ve Se gibi ağır metal içerikleri ICP-AES cihazı ile tespit edilmiş-tir. Araştırma sonuçları gerek sütün gerekse süt ürünlerinin Pb miktarları bakımından insan sağlığı için önemli riskler oluşturabi-leceğini göstermiştir.
