Some Factors in the Effective Amount of Corn Bread Phytic Acid with Response Surface Method Approach

Abstract



Experimental arrangements are known to be used in scientific researches for
a variety of purposes in areas such as food and health care. In order to be
able to meet the needs of the experimenter in the experiment regulation
methods, it is very important to know the limits of the design in the
development process, to understand the effects of the variables used on the
design, and to find the best solution analytically. However, if an analytical
relationship cannot be expressed between the variables used in defining the
design and the evaluation criterion used to measure the quality of the design,
other methods must be used to achieve the best solution. In such cases, the
response surface method (RSM) is used to experimentally derive the necessary
correlations in the changes that the evaluation measure creates in the design
variables. Consideration of the factors that are thought to be an effect on the
response to the main objective in all testing schemes and to minimize the trial
error. In this study, the effects of phytic acid treatment on corn meal
production were investigated. The use of first-order response surface models
and the application of the results are summarized in a one replicate experiment
in the 3k Central Composite Design (CCD) method of the RSM.
Increasing or decreasing the amount of the substance that affects the CCD assay
will directly reduce the relevant factor. By this method, it is possible to
save both the time and the amount of material by better limiting the area at
certain levels.

Mısır Ekmeğindeki Fitik Asit Miktarını Etkileyen Faktörlerin Belirlenmesinde Yanıt Yüzey Yöntemi Yaklaşımı

Abstract

Deney düzenleme
yöntemlerinin bilimsel araştırmalarda, gıda ve sağlık gibi alanlarda birçok
farklı amaçla kullanıldığı bilinmektedir. Deney düzenleme yöntemlerinde, deneyi
yapan kişinin ihtiyaçlarına karşılık bulabilmesi için; geliştirme sürecinde
olan tasarımın sınırlarını bilmek, kullanılan değişkenlerinin tasarım
üzerindeki etkilerini anlamak ve analitik olarak en iyi çözümü bulmak oldukça
önemlidir. Ancak tasarımı tanımlarken kullanılan değişkenler ile tasarımın
kalitesini ölçmek için kullanılacak olan değerlendirme ölçütü arasında analitik
bir bağıntı ifade edilememesi durumunda en iyi çözüme ulaşmak için başka
yöntemlerin kullanılmasını gerekir. Bu gibi durumlarda değerlendirme ölçütünün
tasarım değişkenlerinde oluşturduğu değişmelerde gerekli bağıntıları deneysel
yoldan elde etmek için yanıt yüzey yöntemi kullanılır. Bütün deneme
düzenlerinde temel amaç üzerinde durulan yanıt değişkenine etkisi olabileceği
düşünülen faktörlerin dikkate alınması ve deneme hatasının minimuma
indirilmesidir. Bu çalışmada, mısır ekmeği üretimi sırasında uygulanan
işlemlerin fitik asit miktarına etkileri incelenmiştir. Birinci derece yanıt
yüzey modeli kullanılmıştır. Problemin yapısına
 
3k CCD (Central Composit Design-CCD-Merkezi Bileşik deneme)
düzeni uygundur. Deneme düzeni tek tekrarlıdır
. CCD
deneme düzenini etkileyen madde miktarını artırmak ya da azaltmak direkt olarak
ilgili faktörü artıracak ya da azaltacaktır. Bu yöntem sayesinde belirli
düzeylerdeki alanı daha iyi sınırlandırarak hem zamandan hem de madde miktarından
tasarruf yapılması sağlanabilir.
