Tüketim alışkınlıklarına dair yapılan incelemelerde, hanedanın tüketim tercihleri (Bilgin, Can, 2024, s.16), mutfaklarında kullandıkları araç gereçleri hakkında Matbah-ı Âmire Defterleri, Tayinat defterleri, seyyahların notları birincil başvuru kaynakları arasındadır (Büke, 2016, s.130). Bu kaynaklar, saray ahalisinin tüketim alışkanlıklarına dair veriler içermektedir. Ancak sıradan insanların tüketim pratiklerine ilişkin bilgiler sınırlıdır. Bu eksiklik, sıradan insanların tüketim alışkanlıkları nelerdi? Kilerinde hangi tahıllar bulunmaktaydı? Yemeklerini tatlandırmada hangi baharatları kullanmaktaydı? Mutfaklarında hangi araç gereçler yer almaktaydı? gibi soruların cevaplanmasını gerekli kılmış ve bu araştırmanın ortaya çıkmasına zemin hazırlamıştır. 1845-1906 olarak belirlediğimiz çalışma, 61 yıllık sürece ait tereke kayıtları temel alınarak oluşturulmuştur. Bu çalışmada, Urfa merkezinde ve kırsalında yaşayan sıradan insanların tüketim alışkanlıkları belirlenecektir. Ayrıca maddî kültürü temsil eden mutfak araç gereçleri, incelenecektir. Böylelikle Urfa sakinlerinin tüketim alışkanlıkları, yiyeceklerin hazırlanmasında, sunumunda ve muhafazasında kullandıkları araç gereçleri biçimsel ve işlevsel olarak saptanacaktır. Çalışmanın mekânsal boyutu, belirlenirken sadece Urfa kazasına ait terekelere odaklanılmamış kırsala ait kayıtlara da değinilmiştir. Böylece kaza ile kırsal arasında maddî kültür ögeleri bakımından farklılaşma olup olmadığı sorgulanmıştır. Bu çalışmada, ana kaynağımız Urfa Kadı Sicilleri’nde yer alan terekelerdir. Ayrıca seyahatnameler, yemek kitapları ve konuyla ilgili tetkik eserler de istifade ettiğimiz kaynaklar arasındadır. Mutfak kültürüne odaklanan çalışmada, nitel araştırma yöntemlerinden veri doküman analizi kullanılmış; örnek olay incelemesi yapılmıştır.
In studies on consumption habits, the consumption preferences of the dynasty (Bilgin, Can, 2024, p. 16), the Imperial Kitchen Registers, Allowance Registers, and travelers' notes regarding the tools and equipment they used in their kitchens are among the primary sources of information (Büke, 2016, p. 130). These sources contain data on the consumption habits of the palace inhabitants. However, information on the consumption practices of ordinary people is limited. This deficiency has made it necessary to answer questions such as: What were the consumption habits of ordinary people? What grains were kept in their pantries? What spices did they use to flavor their food? What tools and equipment were in their kitchens? This has paved the way for this research. The study, which we have defined as the period between 1845-1906, is based on inheritance records from this 61-year period. In this study, the consumption habits of ordinary people living in the center and rural areas of Urfa will be determined. In addition, kitchen tools and equipment, which represent material culture, will be examined. Thus, the consumption habits of the inhabitants of Urfa, as well as the tools and equipment they use in the preparation, presentation, and preservation of food, will be determined formally and functionally. In determining the spatial dimension of the study, not only the inheritance records of the Urfa district but also those of rural areas were considered. In this way, the study investigated whether there were differences in terms of material culture elements between the district and rural areas. In this study, our main source is the inheritance records found in the Urfa Qadi Registers. Travelogues, cookbooks, and relevant scholarly works are also among the sources we have utilized. In this study focusing on culinary culture, qualitative research methods, specifically data document analysis, were employed, and a case study was conducted.
