                                                                                                <abstract><p>Bu çalışmada, 0900 Ziraat kiraz çeşidine ait meyvelere hasat sonrası MAP, UV-C ve yenilebilir yüzey kaplamauygulamaları yapılarak, kiraz meyve kalitesi ve muhafaza süresi üzerine etkileri araştırılmıştır. Yapılan uygulamalarsonrasında meyveler soğuk hava deposunda 0 oC’de % 85–95 oransal nemli ortamda 4 hafta süre ile muhafaza altınaalınmıştır. Muhafaza periyodu süresince 7 gün aralıklarla alınan meyve örneklerinde çeşitli fiziksel ve kimyasal analizleryapılmıştır. Meyve kalite özelliklerini belirlemek amacıyla; meyvelerde ağırlık kaybı, meyve sertliği, suda çözünür kurumadde miktarı, titre edilebilir asitlik değerleri, toplam fenolik madde miktarı, toplam antosiyanin miktarı, toplamantioksidan miktarı, çürüme oranı ve dış görünüş değerleri tespit edilmiştir. Uygulamalara göre değişen oranlarda ağırlıkkayıplarında ve toplam suda çözünür kuru madde oranında artış, meyve sertliği ile titre edilebilir asit miktarında ise azalmabelirlenmiştir. UVC uygulamaları meyve çürümeleri üzerine önemli oranda koruyucu etkisi göstermiş ve fenolik maddemiktarını artırmıştır. Muhafaza süresi sonunda pazarlanabilir nitelikte olan meyveler MAP, Alginat, UV-C+Kitosan, UVC+Alginat ve UV-C+MAP uygulanmış meyvelerde görülmüştür.</p></abstract>
                                                                                                                                    <trans-abstract xml:lang="en">
                            <p>: In this study, postharvest treatments of MAP, UV-C and edible coating treatments were applied to cv. 0900 Ziraatsweet cherry and their effects on quality and storage period of sweet cherry were examined. After the treatments, fruits werestored under cold storage at 0oC and 85-95% relative humidity for four weeks. In the course of storage period, variousphysical and chemical analyses in fruit samples were performed at 7 day intervals. Weight loss, fruit firmness, total solublesolids, titratable acidity, total phenolic compounds, total anthocyanin content, total antioxidant, decay rate and externalappearance in sweet cherry fruits were determined to detect fruit quality attributes. Increases in weight loss, total solublesolids and decreases in fruit firmness and titratable acidity, depending on varying proportions of treatments weredetermined. UVC treatments showed a significant protective effect on fruit decay and increased the amount of phenoliccompounds. At the end of storage period marketable attributes were observed in MAP, UV-C+Chitosan, UV-C+Alginat andUV-C+MAP treated fruits.</p></trans-abstract>
