Abstract
The aim of this paper is to use of design of experiments to develop products and processes and to contribute to use it more commonly. In this work, the basic principles related to design of experiments is explained and 23 factorial design set up for food production sector has been constructed. After that, products have been cooked on hot own oven under different process conditions to study their effect on product weight.

Abstract
Bu çalışmanın amacı ürün ve süreçlerin geliştirilmesinde deney tasarımını kullanmak ve yöntemin kullanımının yaygınlaştırılmasına katkıda bulunmaktır. Çalışmada deney tasarımı hakkında temel bilgiler sunulmuş, 23 faktöriyel tasarımların kullanımına ilişkin gıda sektöründe bir uygulama yapılmıştır. Isıl işlem ile farklı üretim koşullarında pişirilen ürünlerin ağırlığını etkileyen faktörler ve bunların uygun üretim düzeyleri belirlenmeye çalışılmıştır.
