Olive oil contain many minor components chlorophyll, carotenoids, tocopherols, phenolic compounds. Content of minor components change according to variety, climate and growing conditions and also minor components affect quality, sensory attributes, antioxidant content and nutritional value of olive oil. In this study, Ayvalik, Memecik, Gemlik and Uslu cv. olive oils, which are important olive varieties in Turkey, were analyzed. Olives collected from Olive Research Institute orchard in 2011/12 crop year, and olive oils obtained by using Abencor system. Total phenolic content, α-tocopherol, chlorophyll and carotenoid content, DPPH antioxidant activity were determined in olive oils. The olive oils total phenolic content chlorophyll content, carotenoid content and antioxidant activity were found between 46.15 to 383.67 mg of CAE/kg of oil, 0.55 to 2.01 mg/kg, 0.79 to 2.07 mg/kg and 45.16 to 122.86 µmol TE/100 g oil, respectively..
