Aktif ambalajlama, gıdaiçerisine herhangi bir katkı maddesi katılmaksızın, polimerik ambalaj üzerindenkorumanın sağlandığı yenilikçi yaklaşımlardan biridir. Aktifleştirme ajanıolarak esansiyel yağların kullanımı ise, koruyucu ve lezzet vericiözellikleriyle yüzyıllardır kullandığımız bitki ve baharatların, ambalaja dahiledildiği son derece doğal ve güvenilir bir çözüm ortaya koymaktadır.Bu çalışmada, aktif polimerik ambalajlamateknolojisinde kullanılan esansiyel yağlar üzerinde durulacaktır.Mikroorganizma üremesine elverişli ve aynı zamanda kompleks yapısı itibariylede bozulma potansiyeli yüksek bir gıda grubu olan süt ve süt ürünlerininambalajlanmasında kullanımları değerlendirilecektir. KW - aktif ambalaj KW - polimerik ambalaj KW - uçucu yağ N2 - Despite the wrong consumer perception thatthere are chemical additives in packaged milk and dairy products, the packagingsector continues to develop natural methods that maintain the quality andreliability of the product during storage. Active packaging is one of theinnovative approaches in which protection is provided through activating agentswithout the addition of any additives into food. The use of essential oils asan activating agent provides a very natural and reliable solution in which theherbs and spices that we have been using their protective and flavouringproperties for centuries have been included in the package.In this study, the essential oils inactive polymeric packaging technology will be emphasized. Their use in thepackaging of milk and dairy products which are possible for microorganismgrowth and at the same time having high deterioration potential due to theircomplex structure, will be evaluated.
