AB  - S. thermophilus ve L. bulgaricus’un laktik asit üretimleri ve proteolitik aktiviteleri skimmilk besiyerinde tek ve karışık kültürler halinde saptanmıştır. S. thermophilus, L. bulgaricus’a kıyasla daha az miktarda metabolik ürünler oluşturmuşlardır. b-disodyum gliserofosfat tek ve karışık kültür halindeki S: thermophilus’un proteolitik aktivitesini yükseltmiş, ancak laktoz enzimi aktivitesini etkilememiştir.
N2  - Proteolytic and lactic acid producing activities of single and mixed cultures of L. bulgaricus and S. thermophilus determined. S. thermophilus showed less metabolic activity than L. bulgaricus. Proteolytic activity of S. thermophilus was became higher by disodium glycerophosphate but lactose enzyme activity wasn’t effected.
