                                                                                                <abstract><p>Diğer işletmelere nazaran yiyecek içecek işletmelerinde üretim ve tüketimin eşzamanlı oluşu, yönetimin birçok faktörü göz önünde bulundurarak ve hesaplayarak hareket etmesini gerektirmektedir. İşletme yönetimleri görevlerini eksiksiz yerine getirebilmek için profesyonel anlayışlar sergileseler de, müdahale edemedikleri ve yönetimin işlevini sınırlayan birçok faktörle karşı karşıya kalabilmektedir. Bu varsayımdan hareketle bu araştırma, yiyecek içecek işletmeleri yönetimini sınırlayan faktörleri tanımlamayı amaçlamaktadır. Bu doğrultuda, Eskişehir’deki birinci sınıf yiyecek içecek işletmelerinde üst düzey 11 yönetici ile görüşme yapılmıştır. Yapılan görüşmeler neticesinde elde edilen veriler içerik analizi ve betimsel analizine tabi tutulmuştur. Yapılan analiz sonuçlarına göre, yiyecek içecek işletmeleri yönetimini sınırlayan  içsel ve dışsal olarak tanımlanan iki temel hususun var olduğu tespit edilmiştir. Bununla beraber her bir kategorinin altında farklı isimlerde toplam on bir adet tema tanımlanmıştır.</p></abstract>
                                                                                                                                    <trans-abstract xml:lang="en">
                            <p>Compared to other businesses, the simultaneous production and consumption in food and beverage businesses requires the management to act by considering and calculating many factors. Even though business managements show professional understanding in order to fulfil their duties completely, they may be faced with many factors that they cannot interfere with and that limit the function of the management. Based on this assumption, this research aims to identify the factors that limit the management of food and beverage businesses. In this direction, interviews were held with 11 senior executives in first-class food and beverage businesses in Eskişehir. The data obtained as a result of the interviews were subjected to content analysis and descriptive analysis. According to the results of the analysis, it has been determined that there are two main issues, defined as internal and external, that limit the management of food and beverage businesses. In addition, a total of eleven themes with different names were defined under each category.</p></trans-abstract>
