Applying Lean Thinking And Value Stream Mapping On Firm Producing Ice Cream

Abstract

Begin to lean starts with lean thinking. Lean think is analyzing effectiveness and efficiency of the processess removed from waste, reduce costs, and offer excellent valuefor the customer. Lean thinking has focused to eliminate all waste in the manufacturing system. Lean production system provides compatible communication among employees, suppliers and management for high quality, low cost, and customer satisfaction. The study has been conducted primarily to principle of lean thinking.After explained lean thinking principles, it is negotiated with directors of corporation for practice part of study at an ice cream manufacturing enterprise. Current production process was analyzed. Then it is determined as problems excessive at stocks and over surplus at the period of conversion mold. It is practiced the value stream mapping technic which is one of lean production technics for eliminate these problems. After practiced this technic, excessive at stocks and the period of conversion mold was minimized. Thus, it has been economized from costs and time. With study new the period of conversion mold has been shown at future state of value stream mapping.

Yalın Düşünce ve Değer Akış Haritalamasının Dondurma Üretim İşletmesinde Uygulanması

Öz

Yalın olmak yalın düşünceyle başlar. Yalın düşünce israflardan arındırılmış süreçlerin etkinlik ve verimlilik analizlerini yaparak, maliyetleri azaltmak ve müşteriye mükemmel değerler sunmaktır. İmalat sistemindeki tüm israfları ortadan kaldırmaya odaklanmıştır. Yalın üretim sistemi, yüksek kalite, düşük maliyet ve müşteri tatmini için, çalışanların, yöneticilerin ve tedarikçilerin uyumlu bir iletişim kurabilmesini sağlar. Çalışmada öncelikle yalın düşünce ilkeleri hakkında bilgiler verilmiştir. Yalın düşünce ilkeleri açıklandıktan sonra araştırmanın uygulama kısmını oluşturmak için bir dondurma imalat işletmesinde şirket yöneticileri ile görüşülüp mevcut üretim süreci incelenmiş, problemin kalıp değişim sürelerinin fazla oluşu ve stoklardaki aşırı fazlalık tespit edilmiştir. Ortaya çıkan kalıp değişim sürelerini ve stokları azaltmak için yalın üretimin tekniklerinden biri olan değer akış haritalama uygulanmıştır. Bu uygulama sonucunda kalıp değişim süreleri ve stoklar en aza indirilmiş ve bu sayede maliyetlerden ve zamandan tasarruf edilmiştir. Ortaya çıkan yeni kalıp değişim süreleri gelecek durum değer akışı haritalamasında gösterilmiştir.
