Apricot has been growing in our country for centuries. Turkey ranks first in the world in the export of dried apricots. Malatya has an important place in the production of dried apricots. Including glucose, fibers, proteins, minerals and vitamins apricot is known to be beneficial for human health. Besides, it has an important anticancer, antioxidant effect due to its phytochemical composition. In our study, we aimed to determine the microorganism content of the Hacıhaliloğlu dried apricot grown in Malatya and to investigate their potential to be used as probiotics. 5 mm diameter samples were taken from the inside of the dried apricot with a scalpel and were added to the 5 ml of Luria Bertani Broth (LB) medium and incubated at 37 ° C for 4 hours. After incubation, a sample of LB liquid medium was taken and added to Yeast Extract Peptone Dextrose (YPD) media and kept in the oven and room temperature. "Matrix-assisted laser desorption / ionization" mass spectrometry (MALDI-TOF MS) was used to identify bacteria isolated from pure culture. 73 of the reproduced bacteria were classified at the level of species with MALDI-TOF MS. It was seen that these bacteria belong to 6 genera and 18 species. No microorganisms that could be considered pathogens for human health were encountered. Bacillus subtilis and Bacillus licheniformis, microorganisms with high probiotic potential were detected in the dried apricot samples. Our data prove that sun dried apricot is an important nutrient that contain probiotics. Our study is the first study which shows that Malatya dried apricot contains microorganisms with high probiotic potential.
