Erzurum’da Tüketime Sunulan Buğday Unlarının Toplam Aflatoksin, Aflatoksin.B1 ve Okratoksin A Yönünden İncelenmesi

Abstract

Bu çalışmada Erzurum piyasasında satışa sunulan buğday unu örnekleri toplam aflatoksin, AFB1 ve okratoksin A yönünden incelenmiştir.Çalışmada Erzurum yöresinden toplam 50 örnekte toplam aflatoksin, AFB1 ve okratoksin A analizi yapılmıştır. Toksin varlığının belirlenmesinde ELISA tekniği kullanılmıştır.İncelenen toplam 50 buğday unu örneğinin 37 adedinde (%74), AFB1 tespit edilmiştir. Örneklerin 13 (%26) adedinde ise ölçülebilir sınırlar içerisinde AFB1 belirlenememiştir. Numunelerin 8 tanesinde (%16) ise AFB1 miktarının Türk Gıda Kodeksi‟ne göre, kabul edilebilir sınırların üzerinde olduğu saptanmıştır. Örneklerin 37 (%74) adedinde toplam aflatoksin belirlenmiş ve örneklerin 13(%26) adedinde ise ölçülebilir sınırlar içerisinde toplam aflatoksin tespit edilememiştir. Örneklerin 9 tanesinde (%18) ise toplam aflatoksin miktarının Türk Gıda Kodeksi‟ne göre, kabul edilebilir sınırların üzerinde olduğu saptanmıştır. İncelen numunelerin 45 tanesinde (%90) okratoksin A tespit edilmiş, 5 (%10) adedinde ise ölçülebilir sınırlar içerisinde bu maddeye rastlanılmamıştır. Örneklerin 6 (%12.00) adedinde ise okratoksin A miktarının Türk Gıda Kodeksi‟ne göre, kabul edilebilir sınırların üzerinde olduğu saptanmıştır.Korelasyon analizi sonucu, unların toplam aflatoksin, AFB1 ve okratoksin A içerikleri arasında önemli düzeyde (P < 0.01) ilişki olduğu saptanmıştır. Toplam aflatoksin ve AFB1 arasında 0.920, toplam aflatoksin ve okratoksin A arasında 0.519, AFB1 ve okratoksin A arasında ise 0.537 korelasyon katsayıları hesaplanmıştır.
