Analyzing a Decade of Research on Industrial Kitchen Design: A Systematic Mapping with an Architectural Focus

Abstract

Industrial kitchens represent a shared field of study among numerous disciplines. Each discipline contributes uniquely and valuably to kitchen design. However, as these disciplines—ranging from social sciences to engineering—possess their own distinct languages and areas of focus, there is a need to synthesize the knowledge they produce. The present study aims to address this need. In line with this objective, a systematic literature review was conducted to examine studies on industrial kitchens published over the past ten years. The research process followed the PRISMA protocol, consisting of five main stages: planning, identification, screening, evaluation, and synthesis. The searches were carried out using the Web of Science and Scopus databases. After the removal of duplicate records, 1,819 unique studies were included for further evaluation. During the evaluation phase, both inclusion–exclusion criteria and a layered screening method were applied. A total of 70 studies were selected and subjected to descriptive and thematic analyses. The findings are discussed in detail under the evaluation section. Ultimately, it was observed that there is a lack of publications—both in quantity and quality—within the field of architecture, which plays a central role in defining the physical structure of industrial kitchens.

ENDÜSTRİYEL MUTFAK TASARIMI ALANINDA ON YILLIK LİTERATÜRÜN SİSTEMATİK HARİTALAMASI: MİMARLIK AÇISINDAN BİR DEĞERLENDİRME

Abstract

Endüstriyel mutfaklar pek çok farklı disiplinin ortak bir çalışma alanını oluşturmaktadır. Her bir disiplin mutfak tasarımına dair özgün ve değerli katkılar sunmaktadır. Ancak sosyal çalışmalardan mühendislik çalışmalarına kadar uzanan bu disiplinlerin her biri kendine has bir dile ve ilgi alanına sahip olduğundan ürettikleri bilgilerin harmanlanmasına ihtiyaç duyulmaktadır. Mevcut çalışma bu ihtiyacın giderilmesini amaçlamaktadır. Bu amaç doğrultusunda sistematik literatür taraması yöntemi ile geçtiğimiz on yıl içerisinde endüstriyel mutfaklar üzerine yapılmış çalışmalar incelenmiştir. Araştırma sürecinde PRISMA protokolü; planlama, tanımlama, tarama, değerlendirme ve sentezleme olmak üzere beş temel aşamada gerçekleştirilmiştir. Taramalar Web of Science ve Scopus veritabanları üzerinde gerçekleştirilmiştir. Yinelenen çalışmaların çıkarılmasından sonra elde kalan 1819 özgün çalışma değerlendirmeye alınmıştır. Değerlendirme aşamasında dahil etme – hariç tutma kriterleri ile birlikte katmanlı eleme yönteminden faydalanılmıştır. Çalışma kapsamına alınan 70 çalışma tanımlayıcı ve tematik analizlerden geçirilmiştir. Ulaşılan sonuçlar değerlendirme başlığında kapsamlı bir biçimde ele alınmıştır. Sonuç olarak endüstriyel mutfakları fiziksel açıdan ortaya koyan mimarlık disiplininde beklenilen sayıda ve nitelikte yayın olmadığı görülmüştür.
