Abstract

We investigated the histologica,l changes of thyroid gland in rabbits submitted to various nutritional patterns :
No structural changes were observed in rabbits fed with normal control nutrition combined with 250 gr. of kale (Brassica Oleracea
Acephala) or supplemented with 5 pg. of iodine per kg. of body weight per day.
Iodine deficient nutrition produced macrofollicular colloid and microfollicular paranchymatous goiter.
In rabbits fed simply with 250 gr. of kale per Kg/per day we observed the histologic changes fitting to the paranchymatous goiter. But, with the reduction of this quantity below 100.0 gr. per Kg. per day, a macrofollicular colloid goiter pattern was associated to the microfollicular pattern.
Thiocyanate content of the edible part of kale Iwas found to be 11.0+0.3 mg 100 gr. and of milk 1.4+0.08 mg/100 ec.

The maximum amounL of kale consumed in the Eastern Black Sea Region in Th-lrkey is 400.0 gr., and of milk is 0.5 liter per person/ per day. The thiocyanate contents of these foods are 44.0 mg. and 7.0 mg. respectively. These quantities of thiocyanate are far below the amount of the thiocyanate showing antithyroid and goitrogen activity in rabbits and in human.
Then, in the quantities consumed, the kale and milk can not play a role in the etiology of goiter in the Eastern Black Sea region endemics in Turkey.
