Besinlerle husule gelen kimyasal zehirlenmeler 5 kısımda mütalea edilmiştir : a.) Yanlışlıkla yenilen toksik besin maddeleri, b.) Tabiatta bulunan ve besinlere karışabilen toksik maddeler, c.) Normal gıdalarda bulunan ve özel şartlarda toksik tesir eden maddeler, d.Hileli gıdalardaki toksik maddeler ve e.) Besin additifleri. Her kısımda, memleketimiz bakımında önem arzeden toksik maddeler ayrıca belirtilmiştir.
The chemical poisonings by nutrition have been reviewed in five parts : a.) The toxic foods which can be eaten by mistake. b.) The
naturally occuring toxic substances which can be mixed with foodstuffs. c.) The chemicals occuring in normal foods and producing toxic effects in some special circumstances. d.) Toxic substances in adulterated foods and e.) Food additives. In every part, special emphasize has been made on the nutritional intoxications which are observed in Turkey.
