Çilek Çeşitlerinin Dondurulmaya Elverişliliği Üzerine Bir Ön Çalışma

Abstract

Altı çilek çeşidinin derin dondurmaya uygunluğu üzerine bir ön çalışma yapılmıştır. Çeşitler, merkezin meyve bölümünde yürütülen bir denemeden seçilmiştir. Şeker ilave edilerek çilekler -30°C'de dondurulup -20°C'de beş ay bekletilmiştir. Altı çeşidin uygunluğunu belirlemek için dört farklı test yapılmıştır. Bunlar: damlama kaybı, meyve suyu lekesi, çekme ve organoleptik testtir. Ön çalışma, derin dondurma için ümit vadeden çeşitlerin Cambridge, Tioga ve Pocahontas olduğunu göstermiştir. Ancak, derin dondurmaya uygunluğu belirlemek için hammadde kalitesi, olgunluk, meyve büyüklüğü ve çeşit özellikleri açısından dikkatli bir inceleme gerekmektedir. Bu faktörlerle ilgili olarak daha ileri çalışmalar yapılacaktır.

A Preliminary Study On the Suitability of Strawberry Varieties for Deep Freezing

Abstract

A preliminary study was made on the suitability of six strawberry varieties for deep freezing. The varieties were selected from a trial conducted by the fruit section of the center. Sugar was added and the strawberries frozen at -30°C and kept at -20°C for five months. Four different tests were made to determine the suitability of the six varieties. These were: drip loss, juice spot, shrinkage and organoleptic test. The preliminary study showed that promising varieties for deep freezing are Cambridge, Tioga and Pocahontas. However, to determine suitability for deep freezing careful attention is necessary with regard to quality of the raw material, maturity, fruit size and varietal characteristics. Further studies will be made regarding these factors.
