Bazı Şeftali Çeşitlerinin Pulpa Uygunluğu Üzerinde Bir Araştırma

Öz

Çalışmada, Yalova Atatürk Bahçe Kültürleri Araştırma Enstitüsü deneme bahçesinde bulunan, yabancı kökenli bazı şeftali çeşitlerinin pulp yapımına uygunluk durumları incelenmiştir. 1982 ve 1983 yıllarında hasat edilip laboratuvara getirilen şeftalilerin önce taze haldeki bazı kalite özellikleri incelenmiş ve daha sonra meyveler pulpa işlenmiştir. Çeşitlerin pulpa uygunluğunda; renk, pulp verimi, toplam asitlik ve suda çözünür madde değerleri ölçüt olarak alınmış olup, bu nitelikler "tartılı derecelendirme" yöntemine göre değerlendirilmiştir. Sonuçta; Golden Jübile, July Elberta, Redhaven ve Glohaven şeftali çeşitlerinin pul pa uygunluk yönünden, ilk dört sırada yer aldıkları saptanmıştır.

A Study on Suitability of Some Peach Cultivars for Pulp Making

Abstract

In this study, 13 peach cultivars were investigated in respect of their suitability for pulp making. The samples were harvested from the experiment orchard of Yalova Horticultural Research Institute in 1982 and 1983. First, the pomological properties of the fruits were studied and then they were processed in to pulp. The characteristics evaluated in the raw material included fruit width, length, fruit weight, stone weight and pulp yield. On the other hand, pH value, total acidity, soluble solids and pulp colour by test panel were determined in the pulp. The results are as follow; 1. Fruit width 7.1-8.8 cm, fruit length 6.6-8.0 cm, fruit weight 192-328 gms, stone weight 7.1-10.7 gms and pulp yield 51.5-72.0% in the fresh samples. 2. pH value 3.80-4.30, total acidity as malic add 0.62-0.79% and soluble solids 11.2-13.7% in the pulp. It was concluded that the peach cultivars of G. Jubile, J. Elberta, Redhaven and Glohaven were found more suitable for pulp making.
