Dondurarak ve Açık Havada Kurutarak Muhafazanın Kuşburnu Meyvesinin Bazı Kalite Özelliklerine Etkileri

Öz

Bu çalışma, farklı kuşburnu genotiplerinde zamana ve muhafaza ortamına bağlı olarak meydana gelen bazı fitokimyasal değişimleri belirlemek amacıyla 2012 yılında yürütülmüştür. Araştırmada materyal olarak, seleksiyon yoluyla elde edilmiş ve Gaziosmanpaşa Üniversitesi, Ziraat Fakültesi, Bahçe Bitkileri Bölümü Araştırma ve Uygulama Alanında kurulmuş olan kuşburnu bahçesinde bulunan MR–15 (Rosa dumalis), MR–26 (R. canina) ve MR–84 (R. villosa) no.lu genotiplerin meyveleri kullanılmıştır. Kuşburnu genotipleri, optimal olgunluk düzeyleri dikkate alınarak hasat edilmiş ve muhafaza ortamlarına alınmıştır. Araştırmada üçer ay arayla C vitamini, toplam şeker, toplam fenolik bileşik, α–tokoferol, β–karoten, toplam antioksidan aktivite analizleri yapılmıştır. Muhafaza süresince, C vitamini içeriği MR–15 genotipinde kurutarak, MR–26 ve MR–84 genotipinde ise dondurarak en iyi şekilde korunmuştur. En yüksek toplam şeker içeriği kurutularak muhafaza edilen kuşburnu örneklerinden tespit edilmiştir. Muhafaza süresince, toplam fenolik bileşikler ve toplam antioksidan aktivite tüm genotiplerde azalış göstermiştir. Ancak dondurularak muhafazada meydana gelen azalış daha düşük olmuştur. Muhafaza süresince, kurutulmuş kuşburnu örneklerine ait α–tokoferol (E vitamini) ve β–karoten (A Vitamini) içeriğinde meydana gelen artış belirgin olmuştur.

Effect of Deep Freezing and Air-Drying Storage on Some Quality Characteristics of Rose Hip Fruits

Abstract

The aim of this study was to determine the effect of storage media and time intervals on phytochemical content of fruits of some rose species. Study was carried out in research and treatment area of Horticultural Department of Agricultural Faculty of Gaziosmanpaşa University in 2012. Fruits of MR–15 (Rosa dumalis), MR–26 (R. canina) and MR–84 (R. villosa) rosehip genotypes that selected as promising for cultivation were used in experiment. Mature fruits of rosehip genotypes were harvested and stored in dark room (20℃) and deep freezing (–20℃) conditions. Vitamin C, total sugar, total phenolic compounds, α–tocopherol, β–carotene and the antioxidant activity of fruits were analyzed three–month intervals during a year. As results; vitamin C was higher in deep freezed fruits than dried and stored in dark room conditions. The highest total sugar content was obtained in dried fruits stored in dark room conditions. Total phenolic compounds and total antioxidant activity decreased in both freezed and dried fruits during storages. But decreases in deep freezing conditions were lower than dark room conditions. Increases in contents of α–tocopherol (vitamin E) and β–carotene (vitamin A) in dried fruit samples were remarkable.
