Sarı Alıç Genotipinin (Crataegus azarolus L.) Farklı Olgunlaşma Dönemlerinde Meyve Kalite Özelliklerindeki Değişimler

Abstract

Bu çalışma, Sarı alıç genotipinin meyve kalite özelliklerinin olgunlaşma sürecindeki değişimlerini incelemek amacıyla 2017 yılında sürdürülmüştür. Bu amaçla, meyve renginin yeşil, sarı-yeşil ve sarı olduğu üç farklı dönemde meyve kalite özelliklerinden meyve ağırlığı, meyve eni, meyve boyu, meyve eti sertliği, çekirdek sayısı, çekirdek ağırlığı, yenilebilir meyve oranı, suda çözünebilir kuru madde (SÇKM), pH, asitlik ve SÇKM/Asit oranı analizleri ve Minolta ile renk ölçümleri gerçekleştirilmiştir. Çalışma sonucunda, yeşil dönemde 12.23 g olan meyve ağırlığının sarı-yeşil döneme geçerken %19.68 artışla 14.64 g olduğu ve bu dönemden sarı döneme geçişte %15.53’lük bir artışla 16.91 g olduğu belirlenmiştir. Meyve eti sertliğinin yeşil dönemde 24.47 kg-kuvvet olarak ölçülürken, bunun sarı-yeşil döneme geçişte hızla azaldığı (4.10 kg-kuvvet; %83 azalış) ölçülmüştür. Sarı alıç genotipinin SÇKM içeriğinin her üç olgunlaşma döneminde çok az bir farklılık gösterdiği (sırasıyla, %15.47, %15.82 ve %14.47), ancak titre edilebilir asitlik değerlerinin yeşil dönemden sarı döneme geçerken %24.52 oranında azaldığı saptanmıştır. Meyve kabuk renginin yeşilden sarıya dönüşümünde yeşil-kırmızıyı gösteren a* değerinin %48.97 oranında azalırken, sarı rengi ifade eden b* değerinin %21.04 oranında arttığı belirlenmiştir. Sonuç olarak, bu genotipin en iyi karakteri olarak gösterilen, tatlı-mayhoş tadının oluştuğu sarı-yeşil dönemin meyve kalite özellikleriyle de en uygun hasat zamanı olduğu söylenebilir.

Changes in Fruit Quality Characteristics During Different Ripening Stages of Sarı Alıç Genotype (Crataegus azarolus L.)

Abstract

The study was carried out the changes in the fruit quality characteristics of the Sarı Alıç hawthorn genotype during the maturation stages were investigated in 2017. For this purpose, fruit quality characteristics such as fruit weight, fruit diameter, fruit length, fruit firmness, number of seeds, seed weight, edible fruit rate, total soluble solids (TSS), pH, acidity and TSS/Acid ratio and color measurements with Minolta were analyzed. As a result of the study, it was determined that the fruit weight was 12.23 g in the green stage whereas it was 14.64 g with an increase of 19.68% in the yellow-green. It was also 16.91 with an increase of 15.53% in the yellow stage. While the fruit firmness was measured as 6.41 kg-force in the green stage, it was rapidly decreased (4.10 kg-force; 83% decrease) in the yellow-green stage. It was found that the Sarı Alıç genotype has a few differences of TSS content during all three maturation stages (15.47%, 15.82% and 14.47%, respectively), but the titratable acidity value decreased by 24.52% from the green stage to the yellow stage. There was found the b* value, indicating the yellow color, increased by 21.04% and the a* value, indicating the green-red color, was decreased by 48.97% when fruit skin color was changed from green to yellow. As a result, this genotype can be harvested for excellent fruit quality characteristics in the yellow-green stage, which is shown as the best character, sweet-sour taste.
