Türkiye’den Toplanan Kestane Kabağı (Cucurbita maxima Duchesne) Genotiplerinde Meyve Et Rengi İle Karotenoid Miktarı Arasındaki İlişkinin Belirlenmesi

Abstract

Kışlık kabak ıslahında meyve et rengi önemli bir kalite kriteridir. Kabak meyvelerine et rengini ihtiva ettikleri karotenoid bileşikleri vermektedir. Kışlık kabaklarda hakim karotenoid 3-karoten olmakla birlikte, a-karoten, lutein, zeaksantin, 3-kryptoksantin, antheraksantin ve likopen de bulunmaktadır. Kestane (Cucurbita maxima Duchesne) kabağı genotiplerinde karoten içeriği ve profili ile renk arasındaki ilişkinin belirlenmesi amacıyla ülkemizin farklı bölgelerinden toplanan ve seleksiyona tabi tutulan kestane kabakları arasından sarı, turuncu ve koyu turuncu meyve et rengine sahip toplam 27 genotip denemeye alınmıştır. Hasat dönemi sonunda alınan örneklerde toplam karotenoid miktarı (mg/kg) ve karoten bileşikleri olan lutein, zeaksantin, 3-kryptoksantin ve -karoten miktarı (mg/kg) ile meyve et rengi değerleri L*, a*, b*, a/b, (a/b)², C*, h° cinsinden belirlenmiştir. Araştırmamızda meyve et rengi ve karotenoid bileşikler yönünden genotipler arası fark p<0,001 hata düzeyinde istatistiksel olarak anlamlı bulunmuştur. Meyve et rengi ile karotenoid bileşikleri arasında ise istatistiki düzeyde önemli ilişki olduğu saptanmıştır.

Determination of Relations Between Carotenoid Quantity and Flesh Color on Winter Squash (Cucurbita Maxima Duchesne) Collected from Turkey

Abstract

Flesh color is an important criterion on winter squash (Cucurbita Maxima Duchesne) breeding. Carotenoid compounds that pumpkins contain supplies a variety of color for their flesh color. Winter squashes contain mainly P-carotene also a-carotene, lutein, zeaxanthin, beta-cryptoxanthin, antheraxanthin and lycopene is available in it. Determination of relations between carotene content and color of winter squash collected from different regions of the country with subjected to selection about fruit flesh color yellow, orange and dark orange were a total of 27 genotypes experiment. At the end of the harvest period, a total carotenoid (mg/kg), lutein, zeaxanthin, beta-cryptoxanthin and beta-carotene amount (mg/kg) with fruit flesh color (L*, a*, b*, a/b, (a/b)2, C*, h°) are determined in samples. As a result of study in relationship between flesh color and carotenoid compounds has a significant correlation at the p<0,001 level. It is revealed that there is statistically significant correlation level relationship between fruit flesh color and carotenoid compounds.
