Molehiya (Corchorus olitorius L.) Bitkisinde Antioksidan Aktivitenin Belirlenmesi

Abstract

Molehiya (Corchorus olitorius L.) bazı Akdeniz ülkeleri, Afrika ve Asya ülkelerinde yetiştirilen tek yıllık, otsu bir sebze türüdür. Kuzey Kıbrıs Türk Cumhuriyetinde yaz döneminde yaygın olarak yetiştirilmekte, taze veya kuru yaprakları pişirilerek tüketilmektedir. Araştırmalar, molehiya bitkisinin karotenoid, C vitamini, E vitamini, mineral maddeler, folik asit, a-linolenik asit içeriği bakımından zengin, besleyici değeri yüksek bir tür olduğunu bildirmektedir. Sebzelerde bulunan antioksidan maddelerin, serbest oksijen radikallerinin zararlarına karşı koruduğu ve insan sağlığı bakımından yararlı olduğu belirtilmektedir. Sunulan çalışmada, molehiya bitkisinin yaprak örneklerinde 2,2-diphenyl-l-picrylhydrazyl (DPPH) yöntemi ile antioksidan aktivite belirlenmiştir. Elde edilen sonuçlar molehiyada % inhibisyon olarak hesaplanan antioksidan aktivitenin ortalama %32.64±5.36 olduğunu ortaya koymuştur.

Determination of Antioxidant Activity in Molokhia (Corchorus olitorius L.)

Abstract

Molokhia (Corchorus olitorius L.) is an annual leaty vegetable growing in some Mediterranean, African and Asian countries. It is grown extensively in Turkish Republic of Northern Cyprus and consumed widely by cooking its fresh or dried leaves. Studies revealed that molokhia is rich in carotenoids, vitamins C and E, minerals, folic acid, a-linolenic acid and therefore has high nutritional value. Antioxidants in vegetables are reported to protect against free radical damage and has potential health promoting properties. In the present study, DPPH (2,2-diphenyl-l-picrylhydrazyl) method was used to analyses antioxidant activity in molokhia leaf samples. The results obtained revealed mean antioxidant activity in molokhia as 32.64±5.36% calculated as % inhibition.
