Abstract

Exopolisaccharides (EPS) are long-chain branched polysaccharides containing repeated units of sugar and sugar derivatives. Microbial exopolysaccharides are produced by bacteria and fungi. Compositions of EPS produced by different microorganisms, the three dimensional structure, physicochemical properties, sugar linkages, the polymer length, branching of the polymer, in the relationship between protein, are different. This uniquely different physical, chemical and biological characteristics have made their widespread use in many industries for the benefit of humanity.
