Olives and olive oil have been attracting considerable attention in recent years due to their health benefits. Investments in recent years in Azerbaijan have led to the development of olive cultivation, and the planting of saplings has increased significantly. To achieve higher oil yields for the olive varieties cultivated, the relationship between harvest time and yield should be examined. In the Gemlik olive cultivar, oil yields of 24.16%, 26.91% and 28.02% were determined during the 4th, 5th and 6th harvest periods, respectively, whereas the Manzanilla olive cultivar exhibited oil yields of 20.86%, 20.62%, and 21.54%. Based on the data obtained in this study, harvesting on November 17th, the fourth harvest period, is determined to be the most suitable for olive oil yield for both olive varieties.
