Bu çalışmada Erzurum ve çevresinden temin edilen 26 adet civil peyniri numunesi incelendi. Ara ırma sonuçlarına
göre civil peyniri numunelerinde belirlenen mikroorganizma kolonllerinin ortalama sayılarının; genel canlı
8.93x1 o 7;g, protaolitik 9.61 x1 o5tg, koliform grubu 4.64x 1 o4tg, fekal streptokok grubu 1.11 x1 o6/g, laktik streptokok
grubu 2.18x106/g, Lactobacilfus 1.33x107/g, Staphylococcus 6.48x105/g, maya ve kül ise 9.04x105/g oldugu tespit
edildi. Sonuç olarak, civil peynirinin oldukça fazla sayıda mikroorganizma içerdiği ve halk sağlığı açısından potansiyel
tehlike arz edebileceği kanaatine varıldı.
In this study, 26 Civil cheese samples obtained from Erzurum province and arround were analysed microbiologically.
The maan values of colony counts were determined as follows for different microorganlsms : for general
viable mlcroorganlsms 8.93x107/g, for proteolitic 9.61x1o5tg, for coliform group 4.64x104/g, for fecal streptococcl
1.11 x 1 o6tg, for lactlc streptococci 2.18xt o6/g, for Lactobacillus 1.33x1 07/g, for Staphylococcus 6.48x1 05/g
and finally for yeast and moulds 9.04x1o5/g. lt was seen that microbiological quality of Civil Cheese was not very
good. Civil cheasa has a potantial risk for public health.
