Abstract

In this study, grouped food and meat expenditure of the housholds in Tokat Province were investigated and income and price elasticities of grouped food and meat demand were estimated. Data used in the study were obtained from the 274 families having different socioeconomic charactaristics by face to face survey application. According to the income groups in the study region, it has been seen that the share of food expenditure in the family budget changed between %62 and %18. Besides, it has been determined that food demand price elasticity was less than one and income raising did not increase food consumption.

Tokat Merkez İlçede Gıda Harcamaları ve Gıda Ürünleri İçin Gelir-Harcama Esneklikleri Tahmini Üzerine Bir Araştırma (Genişletilmiş Doğrusal Harcama Sistemi Uygulaması)

Abstract

Bu çalışmada Tokat ilinde hanehalkı gıda ve et harcamaları incelenmiş ve gruplandırılmış gıda ve et talebinin gelir ve fiyat esneklikleri tahmin edilmiştir. Çalışmada kullanılan veriler Tokat’ta farklı sosyo-ekonomik özelliklere sahip 274 aileden yüzyüze anket uygulaması ile sağlanmıştır. Araştırma bölgesinde aile bütçesinden gıda harcamasına ayrılan payın, gelir gruplarına göre %62 ile %18 arasında değiştiği görülmektedir. Ayrıca gıda talebi fiyat esnekliğinin birden küçük olduğu ve gelir artışıyla gıda tüketiminin artmadığı belirlenmiştir. Her iki model için hesap edilen marjinal tüketim eğilimleri sonucunda ekmek-tahıl, sıvı-katı bitkisel yağ tüketiminin azalış eğilimine buna karşılık et talebinin artış eğilimine sahip olduğu belirlenmiştir.
