The experiment was conducted on Golden Delicious apple grown central district of To-kat in during 1992 to determine it most suitable harvest date and some phsiological chan-ges. Optimum harvesting time of the variety was determined by fruit weight, fruit volume, fruit width and length, total soluble solids (TSS), flesh firmness, titratable acidity, TSS/ titratable acidity rate. According to the results of the experiments, optimum harvesting time of the variety was determined 6th September in 1992. Fruit weight, fruit volume, fruit width, TSS, flesh firmness, titratable acidity, TSS/titratable acidity rate at harvest date were found 185.69 g, 241 mİ, 76.68 mm, % 12.80,14.58 lb, 3.73 g/l and 3.47, respectively.
1992 yılında yapılan bu araştırmada, Tokat Merkez ilçede yetiştirilen Golden Delicious elma çeşidinin derime kadarki bazı fizyolojik değişimleri ve optimum derim kriterlerinin saptanması amaçlanmıştır. Araştırma sonuçlarına göre Golden Delicious 6 Eylül’de derilmiştir. Derim tarihinde meyve ağırlığı, hacmi ve çapı, suda çözünebilir toplam kuru madde, meyve eti sertliği, asit- lik ve suda çözünebilir toplam kuru madde/asiüik oranı sırasıyla; 185.69 g, 241.81 mİ, 76.68 mm, % 12.80,14.58 1b, 3.73 g/l ve 3.47 olarak bulunmuştur.
