As in the whole world in our country; The emergence of previously unknown dangers in food, the global dimension of food trade, the increase in chemical pollutants, the observation of different risks with the entry of new technologies into the sector, the increase in the economic burden at the country level and at the global level, the difficulties in food supply, insufficient and unbalanced income, there is an increase in food-borne diseases due to lack of access to food, increased vulnerability of risk groups, and lack of sustainable food security, unhealthy water and environmental factors.
Whereas, foods are suitable for consumption when they are prepared in accordance with food safety, that is, when they are foods that have not lost their nutritional value in terms of physical, chemical and microbiological properties and therefore will not pose a health risk to consumers. The process of supplying healthy and reliable products that do not harm the environment and human health, from the field (farm) to the table, and whose necessary controls are made at every stage of production, is all of the food safety stages.
In this sense, the consumer also has to undertake some duties. As can be observed from the study, the consumer; should know adequate and balanced nutrition and correct food preferences, common food-borne diseases and prevention methods, safe food supply steps, and what the labels on foods mean.
For this reason, in this study, it was aimed to evaluate the food safety information about fish, which is one of the animal foods that consumers consider the most risky, and food safety and perception. For this purpose, the socio-economic characteristics of consumers, the factors affecting food intake and their knowledge levels on food safety were investigated. The main material of the study consisted of data collected from 393 consumers.
According to the research findings, a significant number of consumers have heard of the concept of food safety. However, it has been determined that most of the consumers do not know many concepts related to food safety and food safety.
