Sayısal Görüntü Analizi Yardımıyla Taze ve Depolanmış Yumurtalarda Kalite Özelliklerinin Belirlenmesi

Abstract

Bu araştırmada özel bir işletmeden temin edilen 12 aylık beyaz yumurtacı (Lohmann White) bir sürüye ait yumurtalarda bazı kalite özellikleri Sayısal Görüntü Analizi yardımıyla belirlenmeye çalışılmıştır. Genel olarak, 7 gün süreyle 180C ve % 55 bağıl nem koşulları altında depolanan yumurtalarda, taze yumurtalara göre iç koyu akın sıvılaşmasına bağlı olarak iç koyu ak ve yumurta sarısı gibi yumurta kısımlarının daha geniş bir alana yayıldığı, bazı özellikler arası ilişkilerin taze ve depolanmış yumurtalarda farklılık gösterdiği gözlenmiştir. Sonuç olarak, yumurtalarda bazı kalite özelliklerinin belirlenebilmesinde Sayısal Görüntü Analizi yönteminin başarıyla uygulanabileceği görülmüştür

Determining Some Quality Characteristics in Fresh and Stored Eggs by Digital Image Analysis

Abstract

In this research, it was conducted to determine some quality characteristics of eggs from a commercial 12 month of age white layer stock by Digital Image Analysis. It was observed egg components such as yolk and inner thick albumen of eggs stored at 18°C and 55 % relative humidity throughout seven days were spread an extensive area than fresh eggs, because of inner thick albumen liquefaction during storage. It was also observed correlation coefficients between some characteristics varied in fresh and stored eggs. In conclusion, it was observed Digital Image Process method will be successfully used to determine some egg quality characteristics.
