ELAZIĞ YÖRESİNDE SÜT VE SÜT ÜRÜNLERİNİN PAZARLAMA YÖNTEMLERİ VE PROBLEMLERİ ÜZERİNE BİR ÇALIŞMA

Abstract

Bu çalışmada, Elazığ yöresinde sadece hayvancılıkla uğraşan işletmelerin süt ve süt ürünlerinin pazarlama problemleri ve tüketicilere ulaştırma biçimleri ortaya çıkarılması amaçlanmıştır. Bu amaçla, 1999 yılında Elazığ merkez ve ilçelerinde bulunan toplam köy sayısının %30’nu temsil edecek şekilde köylerde sadece hayvancılıkla uğraşan 738 işletmeden yüzyüze görüşme yoluyla veriler toplanmıştır. Elazığ’da süt ve ürünlerinin satış şekilleri, özel mandıralara (süt fabrikası), bakkal ve benzeri yerlere çiğ süt olarak, bakkal ve benzeri yerlere yoğurt olarak, bakkal ve benzeri yerlere çiğ süt, yoğurt, tereyağı, peynir ve çökelek olarak belirlenmiş ve toplam 738 işletmedeki oransal dağılımı sırasıyla % 3.7, 16.4, 8, 8, 71.1 olarak bulunmuştur. Elazığ’da süt ve ürünlerinin satış yerleri bakkal v.b., mandıra ve diğer yerlere (yakın çevredeki semt sakinlerine ve toplayıcılara) şeklinde belirlenmiş oransal dağılımı sırasıyla % 45.5, 1.3 ve 53.2 olarak bulunmuştur.

(A Study on Problems and Methods of Marketing of Milk and Its Product in Elazıg Province and Its Districts)

Abstract

The aim of this study was to investigate problems being encountered, marketing channels of milk and dairy products of specialised dairy enterprises in Elazığ province.For this purpose, data from total number of 738 dairy farms located in Elazığ province and its districts were collected via personale interviews in 1999 years. The marketing channels of milk and dairy products in Elazığ were determined as row milk to private dairy processing plant and to small grossaries, as yoghurt to markets and similar shops, as crude milk, yoghurt, fresh butter and skim-milk cheeese to markets and similar shopsand the selling rates according to the product type in the 738 administration were calculated to be 3.7, 16.4, 8.8, 71.1%, respectively. Selling places of milk and its products in Elazığ were determined as markets and similar shops, milk factories and other places which serve to inhabitants within the neighbourhood and to the collectors, their rates in the administrations were found as 45.5, 1.3 and 53.2 %, respectively
