The objective of
this study was to determine some morphological characters and antibacterial
performance of Shiitake (Lentinula edodes)
mushroom grown in the growing medium prepared from a mixture of hornbeam
sawdust and wheat bran in the glass jar. In our work, mushroom production was
carried out in the growing media prepared in glass jars. Antibacterial
activities of the extract prepared in DMSO (10%) from the obtained mushrooms on
Enterococcus faecalis (ATCC
29212), Escherichia coli (ATCC
25922), Pseudomonas aeruginosa (ATCC
27853), Bacillus subtilis (ATCC
6633), Klebsiella pneumoniae and Staphylococcus aureus were investigated using spectrophotometric broth
microdilution method. Accordingly, the highest activity was found P. aeruginosa (7.86 mg/ml) while the lowest activity was on B.
subtilis (71.28 g/ml). As a result, it was determined that Shiitake
mushroom grown in glass jar has morphologically close features to mushroom
types grown by other methods and has antimicrobial activity against pathogenic
bacteria.
Bu çalışmanın amacı, cam
kavanozda gürgen talaşı ile buğday kepeği karışımından hazırlanan yetiştirme
ortamında yetiştirilen Shiitake (Lentinula
edodes Berk.) mantarının bazı morfolojik özelliklerini ve antibakteriyel
performansını belirlemektir. Çalışmamızda cam kavanozlar içerisinde hazırlanan
yetiştirme ortamlarında mantar üretimi gerçekleştirildi. Elde edilen
mantarlardan hazırlanan DMSO’ lu (%10) ekstraktın Enterococcus faecalis (ATCC 29212), Escherichia coli (ATCC 25922), Pseudomonas
aeruginosa (ATCC 27853), Bacillus
subtilis (ATCC 6633), Klebsiella
pneumoniae, Staphylococcus aureus
üzerine antibakteriyel aktiviteleri spektrofotometrik broth mikrodilüsyon
yöntemi kullanılarak araştırıldı. Buna
göre, en düşük aktivite B. subtilis (71.28 g/ml) bakterisi üzerine iken, en yüksek
aktivite P. aeruginosa (7.86 g/ml) üzerine bulundu. Sonuç
olarak, cam kavanozda yetiştirilen Shiitake mantarının diğer yöntemlerle
üretilen mantar tiplerine morfolojik olarak yakın özellikler taşıdığı ve patojen
bakterilere karşı antimikrobiyal
etkinliğe sahip olduğu belirlendi.
