VAN OTLU PEYNİRLERİNDE MİKROBİYOLOJİK KALİTE VE KÜF FLORASI

Abstract

Van bölgesinde satışa sunulan Van otlu
peynirierinde 25 örnek
kolifom;fekal koliform, S. aureus,
Clostridium spp. ve kuf-maya yönünden incelendi. Peynirörneklerinin
hiç birisinde fekal koliforma rastlanmazken, toplam örneğin %28'ininthan 105/g.'dan  fazla S. aureus içerdiği tespit edildi. Aynca, izole edilen kuflerin identifikasyonuyapıldi. Ancak
toksik karakterde kaf mantarına rastlanmadi.

Abstract

25 Van
Otlu Cheese samples marketed in Van
region were examinedfor the
presence of coliform, fecal coliform, S. aureus, clostridium, mould andyeast microorganism. Fecal coliforms were
determined in none of
the samples. It wasobserved that S. aureus was existed more than 105/g. in 28 % of samples. In addition,the moulds isoloted from Van otlu cheeses
were identified but it wasn 't determinedtoxic mould species.
