FARKLI AMBALAJ MATERYALLERINİN BİBERİN Capsicum annum L. var. longum SOĞUKTA MUHAFAZASINA ETKİSİ

Abstract

Araştırmada Bağcı Çarliston ve Demre Sivrisi biber çeşitlerinin farkl ı ambalaj materyalleri ile sağlanan modifiye atmosferlerde muhafaza süreleri incelenmi ştir. Ambalajlamada 1.0 kg'l ık delikli ve deliksiz Polietilen DPE, PE ve polipropilen DPP, PP torbalar ile sivri biberde streç film kaph kutular STR kullanı lmıştı r. Kasalar içinde aç ıkta ambalajlanan örnekler de kontrol olarak de ğerlendirilmiştir. Modifiye atmosferin 8°±1 °C sıcaklık ve %85-90 oransal nemde biberlerin muhafaza süresine etkisini belirlemek amac ıyla haftal ık arahldarla ve ayrıca 48 saat süreyle oda =ald ığım alınan örneklerde ağırlık kaybı , suda eriyebilir toplam kuru madde, solunum hızı, gevreklik, enfeksiyonlu ve ü şüme zararı ÜZ gösteren meyve oranlar ı belirlenmiştir Yüksek ağırlık kaybı Çarliston biber çe şitinde muhafaza süresini, kontrolda 3 hafta ile s ı nırlandırmıştır. Çarliston çeşidinde PP'de enfeksiyon ve ÜZ nedeni ile kalite en fazla 4 hafta süreyle korunabilmi ştir. PE, DPE ve DPP uygulamaları ile kalitenin en fazla 5 hafta konmabilece ği, 6. haftada ise enfeksiyon ve ÜZ'nin çok artt ığı belirlenmiştir. Demre Sivrisi çe şidinde ise modifiye atmosferlerde çok az bir kalite kayb ı ile 6 hafta süreyle biberler muhafaza edilebilmiştir. Kontrollerde ise 2. hafta ağırlık kaybı yüksek düzeye ulaşmıştır. Her iki çeşit için de gevreklik, enfeksiyonlar, ÜZ ve ağırlık kaybı değerleri toplu olarak değertendirildiğinde deliksiz PE'in en uygun ambalaj materyali oldu ğu sonucuna vanlmıştı r

EFFECT OF DIFFEREN7' PACKING MATERIALS ON THE STORAGE OF PEPPERS Capsicum annum L. var. longum

Abstract

The storage period for the pepper of Ba ğcı Çarliston and Demre Sivrisi cultivars stored in ` ıfodifı ed Atmosphere" and packaged under different conditions was investigated. 1.0 kg perforated and unperforated polyethylene PPE, UPPE polypropylene PPP, UPPP and plastic trays wrapped with strech film for only long peppers were used as packaging materials, and unpacked peppers were used as control. A storage room set at 8°±1°C with a 85-90% relative humidity was used for these experiments. Weight loss, total soluble solids, respiration rate, cracking score, percentage of infected product and product affected by chilling injury were determined at 7-day intervals during the storage period and after transfer to a room temperature environment for 48 hours. Because of signifı cant weight loss, the storage period was limited to three weeks for the Çarliston fruit controls and to two weeks for Demre Sivrisi pepper cultivar. UPPP packaging extended the storage period, but infection limited this period to four weeks for tl ı e Çarliston cv. UPPE, PPE, and PPP packaging prolonged this period to fıve weeks, but the percentage infection and chilling injury increased during the 6 thweek of storage. The storage period was determined to be as long as 6 weeks without loss of high quality in the Demre Sivrisi cultivar for alt treatments excepting control treatment. When weight loss, cracking rate, chilling injury and infected fruits were taken into account, UPPE gaye the best result in both cultivars.
